Well, after piddling with some simple stuff, I finally decided to deploy a couple Docker containers, because I'm pretty good with that stuff now.
Or, So I thought.
Always happy to be dis-abused of my preconceptions, of the 5 docker things I tried to get running, exactly ZERO worked out of the box.
It's not all the fault of the people, some of it is on weird versions of some of the tools that are floating around. A recent VM I created had the very latest tools, but it was a pig; so I thought I'd take an older-but-still-in-support system instead.
It was a learning experience, and I don't regret it, but I now know I have to keep things more up to date in this ecosystem.
